- Add about 3 oz of Prosecco or more if you want it to be more bubbly.

Ingredients:
- 6 oz gin
- 6 oz blood orange juice, freshly squuezed
- 3 oz honey
- chilled Prosecco
- curls of orange zest
Instructions:
- In a pitcher or a bowl mix the blood orange juice, gin and honey. Stir well to mix, then refrigerate.
- Fill a martini glass halfway with the gin mixture and top with Prosecco.

Apple and Prosecco cocktails
Ingredients:
- 1 apple
- 1 tbsp brandy
- 330ml apple cider
- 750 ml Prosecco
Instructions:
- Preheat the oven to 140C.
- Slice an apple thinly and cut a small slit into each piece.
- Sprinkle with cinnamon and place on a paper lined baking tray. Bake for 15 minutes.
- Turn the slices over, sprinkle with cinnamon again and bake additional 10-15 minutes until dried out.
- Divide the brandy between 6 glasses and top each of them with 55ml apple cider and 125ml Prosecco.
- Garnish with the dried apples.

Ingredients:
- 2 tsp granulated sugar
- 6 mint leaves
- 3/4 oz fig liqueur
- 3/4 oz Amaretto
- 4 oz Prosecco

- gold sanding sugar

Instructions:
- Spread honey onto a plate and the sanding sugar onto another plate.
- Dip the rim of a glass into the honey first, then into the sugar.
- Muddle the sugar and mint into a cocktail shaker, then add the fig liqueur and Amaretto. Muddle again. Leave to the side until the sugar has melted.
- Divide and strain the mixture into two glasses and top with Prosecco.
- Garnish with a mint sprig and enjoy.
