The good news is that with everything happening, it turns out that staying at home wasn’t that bad after all. We get to spend more time with our families, learn new crafts and get cooking. Which is why, today, we have focused on delicious and easy summer desserts. We are going to present 10 super easy recipes to follow. What’s more, these desserts are super easy to make and you don’t have to break the bank to prepare them. So, grab the chocolate and a spatula and get started.
We are kicking things off with a delicious vegan chocolate mousse recipe
Easy summer desserts – chocolate mousse
Ingredients:
- aquafaba from 1 can of chickpeas
- 1 tsp cream of tartar
- 200gr melted dark chocolate
- raw cacao powder
- strawberries
- fresh mint
Simple three-ingredient dessert
Drain the aquafaba from the chickpeas can into a bowl
Add the cream of tartar and whisk until foam is achieved
Add the melted chocolate and mix well
Transfer to jars
Decorate with cacao powder, strawberries and fresh mint
Delicious, easy and vegan

Frozen Skyr cupcakes to replace ice cream
Ingredients:
- 1 teacup oat flakes
- 2 tbsp peanut butter
- 2 tbsp honey
- 200gr Skyr
- 10 fresh strawberries
Once again simple ingredients, creating a delicious summer dessert
Mix the oat flakes, peanut butter and honey together
Blend the Skyr and the raspberries together
In a paper lined muffin tray layer the oats mixture with plain Skyr Yoghurt
Then add the raspberries mixture on top
Decorate with fresh fruits and leave in the freezer
It is super delicious and easy to make

A classic British dessert – Yorkshire pudding
Ingredients:
- 140gr flour
- 4 eggs
- 200ml milk
- 1 tbsp vegetable oil
- chocolate spread
- powdered sugar
These are the ingredients you are going to need
Mix the flour and eggs well
Then add the milk, mix well and refrigerate for 1 hour
Pour oil on the bottom of a muffin tray and heat it in the oven
Pour the cold mixture into the heated oil
Bake for 18 minutes at 220 degrees
Cover with chocolate spread and powdered sugar
Voila! Super delicious and fluffy dessert

Dessert Lasagna with colorful layers
Easy no bake desserts
Ingredients:
For the crust:
- 36 Golden Oreo cookies
- 1/2 cup melted butter
For the Strawberry layer:
- 1 1/2 box of strawberry gelatin
- 2/3 cup boiling water
- 3/4 cup strawberry Greek yoghurt
- 1 cup diced fresh strawberries
- 2 1/4 cups Cool Whip
For the cheesecake layer:
- 1/2 cup softened butter
- 1 cup powdered sugar
- 8 oz. softened cream cheese
- 1 1/2 tsp vanilla
- 1 1/4 cup Cool Whip
For the blueberry layer:
- 1 1/2 box blueberry gelatin
- 2/3 cup boiling water
- 1/2 cup blueberry Greek yoghurt
- 1 cup fresh blueberries
- 2 1/4 cups Cool Whip
Topping:
- 2 1/2 – 3 cups Cool Whip
- 6 oz. white chocolate bar
- 1/2 cup diced strawberries
- 1/2 cup fresh blueberries

Instructions:
For the crust:
- Process the Oreo cookies to make fine crumbs.
- Mix them well with the butter.
- Press them to the bottom of a 9 x 13 x 2-inch dish and place in the freezer
For the strawberry layer:
- Add the boiling water to the gelatin until fully dissolved
- Add the yoghurt, diced strawberries and the Cool Whip until fully combined.
- Pour the mixture to the Oreo cookies layer. Place in the freezer for about 30 minutes.
For the cheesecake layer:
- Mix the butter, cream cheese, powdered sugar and vanilla in a bowl. Then add the Cool Whip and stir until fully combined.
- Pour the mixture over the strawberry layer and place in the freezer for 10 minutes.
For the blueberry layer:
- Add the boiling water to the gelatin until fully dissolved.
- Blend the yoghurt and blueberries together and mix with the gelatin.
- Then add the Cool Whip and stir in well.
- Pour the mixture over the cheesecake layer and refrigerate until set.
For the topping:
- Spread whipped cream on top.
- Cover with grated white chocolate bar and refrigerate for 2 more hours.
- Before serving add fresh fruits.

Cheesecake parfait recipe
Instructions:
For oats layer:
- 1 cup rolled oats
- 1 1/2 tbsp maple syrup
- 1/4 tsp cinnamon
For the cheesecake filling:
- 1/4 cup plain yoghurt
- 4 oz. cream cheese
- 2 tbsp honey
- 1 tsp vanilla extract
For the berry layers:
- 1 cup blueberries
- 1/2 cup raspberries
- 1/2 cup sliced strawberries
Instructions:
- Preheat the oven to 425°F.
- In a baking tray spread the pats and toast for 5-6 minutes.
- Process the oats, maple syrup and cinnamon together.
- Beat the ingredients for the cheesecake filling together until smooth.
- Divide the oats mixture in 4 bowls and start layering fruits with the Filling and oats.
- Refrigerate for about 2 hours before serving.

Key lime pie recipe
Ingredients:
For the crust:
- 1 1/4 cups peacans
- 1 1/4 cups macadamia nuts
- 1/2 cup dried pitted dates
- pinch of salt
- 1/4 tsp vanilla extract
For the filling:
- 1 cup agave syrup
- 1 1/2 cups fresh lime juice
- 1/2 cup coconut milk
- 2 ripe avocados
- 1 1/4 cups coconut oil
- 1/4 tsp salt
- 2 tbsp vanilla extract
Instructions:
For the crust:
- Grease a 9-inch springform baking pan with the oil.
- Process all the ingredients together and press them onto the bottom of the pan.
For the filling:
- Blend all the ingredients together until smooth. Pour the mixture over the crust and freeze overnight.

Mango sorbet recipe to keep you cool during the hottest summer days

Ingredients:
- 1 1/2 cup mango pulp
- 1/2 cup water
- 1/2 cup sugar
- 1 tbsp lemon juice
Instructions:
- Add the sugar to the water and boil until it turns into a thick syrup. Let cool.
- Puree the mangos and add the to sugar syrup. Mix in the lemon juice as well.
- Freeze for 2 hours. Then, once every 45 minutes beat the mixture with a fork. Repeat 4 times and then freeze overnight.

Delicious Oreo pudding pie recipe
Ingredients:
- 2 boxes Oreo instant pudding pie
- 1 ready-to-use Oreo pie crust
- 3/4 cup chopped Oreo cookies
- 2 cups whole milk
- 1 cup heavy whipping cream
- 3 tbsp powdered sugar
- crushed Oreos
Instructions:
- Stir together the pudding mix with the milk until thick. Add the cookies
- Pour 1 1/2 cups of the mixture onto the bottom of the pie crust.
- Beat together the whipping cream and powdered sugar.
- Add 1 cup of the whipped cream into the pudding mixture and stir well. Spread into the pie crust.
- Spread the remaining whipped cream on top.
- Refrigerate over night. Garnish with Oreo cookie crumbs.

Classic dessert – Strawberry Shortcake
Ingredients:
For the strawberries:
- 1 pound ripe strawberries
- 1 1/2 tbsp lemon juice
- 3 tbsp sugar
For the shortcakes:
- 3 tbsp sugar
- 2 cups flour
- 2 tsp baking powder
- 1/2 baking soda
- 1 tsp salt
- 1 tsp lemon zest
- 6 tbsp butter
- 3/4 cup + 1 tbsp cold buttermilk
Instructions:
- Preheat the oven to 400°F.
- Slice the strawberries and mix them with the sugar and lemon juice. Let them marinate at room temperature for about 1 hour.
- Whisk the flour, sugar, salt, baking soda and lemon zest together in a bowl. Cut a 1/2-inch piece from the butter and add it to the mixture. Then, add the buttermilk and stir until fully incorporated. Form the dough into a ball and add the extra buttermilk.
- Spread the dough onto a floured counter into a 8 x 10-inch rectangle, about 3/4-inches thick. Use cookies cutters to cut the biscuits. Transfer them to a paper lined baking sheet, brush with buttermilk, sprinkle with salt and bake for 15 minutes. Let cool.
- Layer with the whipped cream and fresh strawberries.

Ingredients:
- 1/4 cup water or prosecco
- 1/3 cup strawberry jam
- 1/2 tsp balsamic vinegar or lemon juice
- 1/2 cup heavy whipping cream
- 1 cup mascarpone
- 1/2 tsp vanilla extract
- 1/2 tsp confectioners’ sugar
- 2 cups sliced strawberries
- 24 ladyfingers
Instructions:
- In a bowl, beat the mascarpone, cream, sugar, vanilla extract until smooth.
- In a bowl, mix the strawberry jam, balsamic vinegar and water. Dip and coat the ladyfingers in the mixture.
- In a 8 x 8-inch pan layer the ladyfingers with the mascarpone mixture and sliced strawberries. Repeat twice.
- Refrigerate overnight.
