How to make gnocchi with potatoes

Ingredients:

  • 4 russet potatoes
  • 2 1/2 cups flour
  • 1 cup ricotta cheese
  • 1 egg
  • salt

  1. Boil the potatoes for about 20 minutes, drain and remove the peels. Grate the potatoes.

  3. Knead the dough and form into a loaf. Cut it into thin slices as shown in the photo. Roll each slice and cut into small cubes. Dust them with flour.
  4. Add the gnocchi to boiling water and once they are ready you can serve them with any sauce you like.

  • 1lb sweet potato
  • 1 cup whole milk ricotta cheese

  4. Transfer onto a floured surface and form into a loaf. Cut into slices and roll each one. Then, cut each slice into small cubes.

  6. Bring water to a boil and leave a bowl of ice water on the side. Add the broccoli and cook for 1 minute. Drain and transfer to the ice water.
  7. In a skillet heat the butter and pan fry the gnocchi. Add the broccoli, sage, garlic, and salt and cook for a few more minutes.
  8. Remove from heat, wait a few minutes and add the cream and parmesan cheese. Toss well to combine.

Ingredients:

  • 5 cups cauliflower
  • 2/3 cup flour
  • 1 tsp salt

  1. Bring water to a boil and add the cauliflower. Cook for about 6-7 minutes and drain.
  2. Lay the cauliflower on a towel and let cool. Then, squeeze all the excess water out of the cauliflower.
  3. Transfer to a food processor and pulse until it crumbles. Add the flour and salt and pulse until soft dough forms.
  4. Transfer dough to a floured surface, cut into 4 pieces. Roll and stretch each piece and cut into small cubes.
  5. In a skillet heat oil, add the gnocchi and cook until golden brown. At the end add a splash of water.
