Recipe for The Softest Gluten-Free Chocolate Cupcakes Ever

You don’t really need a lot of time to make some chocolate cupcake magic
Things you will need:
- two small bowls
- a whisk
- a spoon
- a big bowl
- a hand-held mixer
- a silicone spatula
- a muffin baking tray
- baking forms for cupcakes
- a cooling rack
- a pipe for the frosting
Ingredients:
For the cupcake batter
- raw organic cocoa powder – 40 grams
- hot water – 175 ml
- coconut flour – 50 grams
- baking soda- 1 tsp
- Xanthan gum – 1/2 tsp
- Acacia powder – 1 tbsp
- organic free-range eggs – 3 pcs.
- extra-virgin olive oil – 125 ml
- Erythritol powder – 2/3 cup
- vanilla extract – 1 tbsp
For the cupcake frosting
- Erythritol powder – 1 cup
- softened butter – 120 grams
- coconut milk – 3 tbsp
- vanilla extract – 1 tbsp
- a little bit of pink food-safe dye
Prepare all the ingredients in the necessary quantities, first, to make the whole process a bliss
Step-by-step Instructions:
For the cupcake batter
- First, prepare all the ingredients in the necessary quantities. This will make the whole process easier and more enjoyable.
- Then place the cocoa powder in a bowl, and add the hot water.
- Use a metal whisk to combine the water and the cocoa, and then set aside.
- After that, take the coconut flour and place it in a bowl.
- Then add the baking soda, Xanthan gum, and the Acacia powder and mix with a spoon. Leave aside.
- Next, take a big bowl and crack three eggs in it.
- After that, pour the olive oil into the bowl. Follow with the Erythritol, and the vanilla extract.
- Then use a handheld mixer to combine all of the ingredients into a smooth, lump-free mixture.
- After that, pour in the cocoa and water mixture you made earlier. Mix with the handheld mixer.
- Then add the dry ingredients, and mix well with a metal whisk until the mixture becomes thick and well-incorporated.
- Next, take your cupcake baking tray and line it with cupcake paper molds.
- Use a spoon to scoop out the cupcake mixture and place it into each of the cupcake molds.
- Bake at 160 Degrees Celsius for 20–25 minutes.
Your muffins are ready!
For the cupcake frosting
- To make the frosting, place the Erythritol powder in a big bowl.
- Then add the softened butter.
- After that, pour the coconut milk and vanilla extract in the bowl, as well.
- Then use the handheld mixer again to mix everything together and create a frosting.
- After that, add a little bit of food-safe pink dye or another colour of your choice.
- Then mix again using the hand held mixer.
- Finally, place the cupcake frosting in a pipe. Then carefully squeeze and form the frosting on all of your cupcakes.
