Ingredients:
- 4 zucchini
- 2 tsp salt
- 2 eggs, lightly beaten
- 1/4 cup shallot, finely chopped
- 1 cup chickpea flour
- 2 tsp baking powder
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- sunflower oil
Instructions:
- Grate the zucchini, toss with the salt and let sit for about 15 minutes. Squeeze out the excess water and transfer into a bowl.
- Add the eggs, shallot, flour, baking powder, coriander, cumin, salt and pepper. Mix well.
- Heat sunflower oil in a saucepan. Add a spoonful of the batter and flatten. Cook until golden brown for about 2-3 minutes, then flip over for about 3 more minutes.
- Serve with yogurt sauce.

Ingredients:
- 1 1/2 lbs zucchini
- 1 tsp salt
- 1/2 cup all-purpose flour
- 1 egg, beaten
- 2 garlic cloves, minced
- 3/4 tsp black pepper
- 1/2 cup manchego cheese, grated
- 1/2 cup chorizo, diced
- 3 tbsp olive oil
Instructions:
- Grate the zucchini, sprinkle with salt and let sit for about 15 minutes. Squeeze out the excess water and transfer to a bowl.
- Mix in the flour, egg, garlic, black pepper, chorizo and cheese.
- Heat olive oil in a skillet and add a spoonfull of the zucchini batter. Cook until golden brown for about 2 minutes, flip over and cook additional 2 minutes.

Ingredients:
- 2 zucchini
- 1 1/4 cup oat flour
- 1/2 cup cheddar cheese, shredded
- 1/4 cup parmesan cheese, grated
- 1 egg
- 3 tbsp chives, chopped

- 1 tsp salt
- 1 tsp garlic powder
Instructions:
- Preheat the oven to 375F.
