Sauteed summer squash recipes
Ingredients:
- 3 yellow squash
- olive oil
- fresh basil and thyme
For the herb oil:
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 2 tbsp finely chopped parsley
- 1 grated garlic clove
- 1/4 tsp salt
- black pepper
For the breadcrumb topping:
- 1/4 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 tbsp chopped parsley
- 1/4 tsp salt
- red pepper flakes
Start by cutting up the squash
Instructions:
- Cut up the squash as shown in the photo.
- In a bowl mix well the ingredients for the herb oil.
- In another bowl mix the ingredients for the topping.
- Over medium heat, heat olive oil in a skillet. Sautee the squash for about 10 minutes and stir occasionally.
- Toss the sauteed squash with the herb oil, then top with the breadcrumb mixture.
- Garnish with the fresh herbs.

Delicious squash orecchiette recipe
Yellow squash recipes
Ingredients:
- 3 summer squash
- 8oz. orecchiette pasta
- 1 tbsp olive oil
- 1 minced garlic clove
- 2 cups chopped spinach
- 1 tsp chopped rosemary
- juice of 1/2 lemon
- 13 cup crumbled feta cheese
- 2 tbsp capers
- a pinch of red pepper flakes
- grated Parmesan cheese
- salt and pepper
Easy, peasy, lemon squeezy
Instructions:
- Slice the squash and pat dry with a towel.
- Cook the pasta according to package instructions.
- Heat olive oil in a skillet over medium-low heat. Add the rosemary and garlic and stir for a few seconds. Add the squash, salt and pepper and let cook on each side until lightly browned.
- Then, stir in lemon juice and toss in the spinach. Add the pasta with a bit of the water it was cooked in.
- Finally, stir in the feta, red pepper flakes and capers. Season and garnish with the parmesan.

Ingredients:
- 4lbs. yellow squash
- 1 cup sour cream
- 1 egg
- 2/4 cup + 1/3 cup breadcrumbs, divided
- 1 1/4 cups shredded cheddar cheese
- 1/2 cup chopped parsley
- 2 tbsp dried chives
- 3 tbsp butter, divided
- 1 yellow onion, chopped
- 2 garlic cloves, minced
- 1 cup shredded parmesan cheese, divided
- salt and pepper
Step by step photo tutorial
Instructions:
- Preheat the oven to 350 degrees.
- Add the squash to a pot of boiling water and let boil for about 5 minutes, drain and set aside.
- In a bowl mix the sour cream, egg, 1/2 cup breadcrumbs, cheddar, 1/2 cup parmesan, parsley and chives.
- In a saute pan melt 1 tbsp butter over medium heat. Add the onion and cook until golden brown, stir in the garlic and saute and additional minute.
- In the same pan add the squash and sour cream mixture and season with salt and pepper. Toss and transfer to an oiled baking dish, spreading it evenly. Cover with foil and bake for 20 minutes.
- In a bowl melt the rest of the butted and add 3/4 cup breadcrumbs and 1/2 cup parmesan, toss well.
- Take the baking dish out of the oven and sprinkle with the breadcrumbs mixture evenly. Return to oven and bake additional 10 minutes. Broil for about 2 minutes.

Zucchini and squash recipes
Ingredients:
- 2-3 zucchini
- 1 yellow squash
- fresh cilantro, basil, dill, chopped
- 2 cups cheddar cheese
- 1/2 cup pesto
- 1/2 red onion, sliced
- 3 tomatoes, sliced
- salt and pepper
This is the easiest casserole recipe ever
Instructions:
- Start by slicing the squash and preheating the oven to 400 degrees.
- Grease a baking pan and place a layer of the squash on the bottom. Top with 1/2 the pesto, 1/2 the zucchini, 1 cup cheese, red onion, 1/2 of the fresh herbs and season with salt and pepper.
- Repeat the previous step and finish with the sliced tomatoes.
- Cover with foil and bake for about 40 minutes. Remove the foil, sprinkle with cheese and let sit in the oven for additional 10 minutes or until the cheese has melted.
You can add as many fresh herbs as you want

How to cook squash and zucchini?
Ingredients:
- 2 tbsp butter
- 1/2 onion, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 2 garlic cloves, minced
- 1/2 cup heavy cream
- 1/4 cup grated parmesan
- 1 cup shredded smoked gauda

Instructions:
- Preheat oven to 450 degrees.
- In a skillet, over medium heat, melt the butter. Sautee the onion for about 5 minutes, add the garlic and sautee for another minute. Add the cream and simmer until it start to thicken, then stir in the parmesan. Add the squash and zucchini and cook for about 5 minutes.
- Cover with the smoked gaude and transfet to the oven. Bake for about 20 minutes.

Ingredients:
- 8oz. pasta of your choice
- 1/4 cup pine nuts
- 5 tbsp butter
- 2 garlic cloves, minced
- 1 zucchini, sliced into rounds
- 1 summer squash, sliced into rounds
- salt and black pepper
- 4oz. crumbled goat cheese
- 1/4 cup fresh basil leaves
Instructions:
- Cook pasta according to package instructions.
- Melt the butter in a skillet over medium-low heat and add the pine nuts. Toss for about 5 minutes and remove the pine nuts from the skillet.
- Turn the heat to low and add the pasta, squash and zucchini to the same skillet. Add the goat cheese, pine nuts and season with salt and pepper. Toss well and add the fresh basil leaves when serving.

How to cook squash?
Ingredients:
- 1/2 cup lentils
- 1 1/2 cups veggie stock
- 3 tbsp butter, divided
- 4 summer squash
- 1/2 cup yellow onion, diced
- 2 garlic cloves, minced
- 1/2 cup red bell pepper, diced
- 1 tsp sriracha
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
- 1/2 tsp balsamic vinegar
- salt and pepper

Instructions:
- Let the lentils and water boil in a saucepan over high heat. Simmer for about 5 minutes. Drain and set aside.
- Preheat the oven to 350 degrees.
- Cut the squash lengthwise and scoop out the flesh, chop it finely and set aside. Rub the squash with butter and bake for about 10 minutes.
- Melt butter in a saute pan over medium-low heat. Add the garlic, onion and squash flesh and cook for about 4 minutes. Stir in the bell pepper, lentils, sriracha, coriander, vinegar and cumin and cook for additional 5 minutes. Season with salt and pepper.
- Stuff the squash with the filling and bake for 10 minutes. Garnish with cilantro.

- 14oz. cherry tomatoes, halved
- 3 tbsp olive oil

- 1 cup shredded parmesan cheese

Instructions:
- Preheat the oven to 400 degrees.
- In a bowl mix the olive oil, Italian seasoning and garlic. Let sit for about 10 minutes.
- In another bowl place the sliced veggies. Pour the olive oil mixture on top and toss gently.
- Line a baking sheet with parchment paper and spread the veggies in it. Season with salt and pepper and sprinkle with parmesan.
- Roast for about 30 minutes and garnish with parsley.

- Using a mixer, whisk the eggs, add the almond flour, sweetener, baking blend, baking powder and salt and mix thoroughly.
